In my ongoing love affair with ginger beer and simple mocktails, I’m bringing you this delicious Honey-Lemon Ginger mocktail recipe.
Like all mocktails with ginger beer, it packs a perfect punch of sweet and spicy. The lemon gives it an added kick, and the ingredients are very simple. You probably have them all on hand.
For this recipe you will need:
- Ginger beer
- Honey syrup (very easy to make)
That is it. Now, what’s honey syrup you may ask? Honestly, it is just diluted honey. You need two simple ingredients to make honey syrup – honey and water.
How to Make Honey Syrup (It’s So Easy):
Put a small pot on the stove and heat 1/2 cup of water on medium heat. (You don’t want it to boil). Once it’s hot, add about 1/4 cup of honey and stir as it dissolves into the hot water.
Some people like to do a 1:1 ratio for their honey syrup to get it thicker. You are free to do that as well, in which case, you’ll add 1/2 cup of honey.
Remove from the hot burner and allow it to cool.
That’s honey syrup.
Keep it in an airtight container or bottle on the countertop or in your fridge for future use.
Simple Honey-Lemon Ginger Mocktail Recipe:
Step 1: Start by preparing your honey syrup per the instructions above.
Step 2: Then, squeeze a large lemon into the bowl. You need about 1 oz of fresh lemon juice (approximately 6 teaspoons).
Step 3: Fill up a highball or rocks glass with ice.
Step 4: Add 1 oz of fresh lemon juice and 1 oz of honey syrup to the glass.
Step 5: Fill the glass with ginger beer and stir.
Step 6: Garnish with fresh lemon wedges.
Can you use ginger ale instead of ginger beer?
You could, but it won’t taste the same and honestly, I think it would be way too sweet. I highly recommend sticking to ginger beer.
Switch up your citrus: You can use fresh lime or orange juice in this recipe, too!
Modify the sweetness level: Increase or decrease the amount of honey syrup you use depending on your desired level of sweetness.
Switch out the syrup: You can use agave or any simple syrup really with this recipe. If you’re feeling adventurous, I highly recommend checking out the HipStirs store. They have a variety of cocktail syrup options.
Add herbs: Toss in some fresh mint leaves to brighten this up.
Honey-Lemon Ginger Mocktail
- 1 highball or rocks glass (any cocktail glass will do)
- 1 bar spoon
- 1 oz honey syrup
- 1 oz lemon juice fresh
- 7 oz ginger beer
- Fill a highball or rocks glass with ice.
- Add 1 oz lemon juice and 1 oz honey syrup.
- Fill the remainder of the glass with ginger beer.
- Stir with a long bar spoon.
- Garnish with fresh lemon wedges (optional).
