Refreshing Piña Colada Mocktail – Just 5 Ingredients!

Although I’m not a fan of getting caught in the rain, give me a virgin piña colada any day of the week. They’re damned delicious. What’s even better? They’re pretty simple to make. If you’ve got a blender, you’ve got all the equipment you need to make a piña colada mocktail.

What You’ll Need:

For a basic piña colada, you’ll need the following:

  • A good blender (you don’t want chunks in your drink)
  • 1 cup pineapple chunks (canned or frozen)
  • 1/2 cup of coconut milk (in the can)
  • 1/3 cup of fresh cream or coconut cream
  • lime juice from half of a lime
  • 2 tbsp honey or coconut sugar
  • ice cubes (a handful)
  • 3-4 Maraschino cherries for garnish (optional)

Pro Tip: Frozen pineapple chunks are great to use because you can get more pineapple flavor and use fewer ice cubes. That being said, canned pineapples are usually coated in syrup, which makes them sweeter. Adjust other ingredients according to your preference!

How to Make a Piña Colada Mocktail:

Step 1: In a blender, combine the pineapple chunks, coconut milk, cream (or coconut cream), lime juice, and sweetener (honey or coconut sugar). Blend until smooth.

Step 2: Add the ice cubes to the mix and blend until the ice is crushed and smooth.

Step 3: Taste the mixture and adjust the sweetness or tartness by adding more sugar/honey or lime juice accordingly. Blend again if you add more of either.

Step 4: Pour your mocktail into glasses and garnish with pineapple slices and cherries.

Modification and Variations:

  • Add 2 ounces of alcohol-free rum: If you want your piña colada mocktail to have a little more oomph, try adding a shot or two of alcohol-free rum. I personally enjoy the rum (and whiskey) made by Ritual.
  • Add whipped cream: Want a more playful version? Add some whipped cream to the top!
  • Substitute pineapple with mango: Is it still a piña colada? No, but why should that matter? It’ll taste amazing.
  • Turn it into a smoothie: Add 1/2 cup of yogurt or a scoop of vanilla ice cream to make it a smoothie.

  • 3 handfuls ice
  • Maraschino cherries (for garnish)

Instructions

  • Put the pineapple chunks, coconut milk, cream, lime juice, and sweetener into the blender and blend until smooth.
  • Add the ice cubes and blend until smooth.
  • Taste the mixture for sweetness and tartness. Adjust sweetener and lime accordingly. Blend again if you add more of either.
  • Pour mixture into glasses and garnish with pineapple wedges and cherries (optional)
